Spread 1 tbsp of jam over each bread slice.
On one slice of bread, place alouette Double Crème Brie in an even layer over jam and top with apple slices. Optional: sprinkle with fresh thyme leaves.
Cover with the other bread slice, jam side against the apples and spread half the mayonnaise over top.
In a heated nonstick or cast-iron pan over medium-low heat, place sandwich, mayonnaise side down and cook until golden, about 2 minutes.
Spread remaining mayonnaise over sandwich, flip and cook until golden and cheese is melted, about 2 minutes.
Remove from heat, cut in half and serve.
