Mediterranean Chicken Wrap
Ingredients
For the Wrap:
- 1 pkg Alouette Smoky Jalapeno Soft Spreadable Cheese
- 4 Tortilla / Pita shells
- 8 oz Cooked rice pilaf prepared in advance
- 2 lb Boneless chicken meat (thigh or breast or combination)
- 1/2 oz Garlic minced
- 1 tbsp Olive oil
- 1 tsp Oregano
- 1/2 tsp Smoked Paprika
- 2 oz Chicken stock
For the Salad:
- 1 cup Diced cucumbers seeds removed
- 1 cup Diced plum tomatoes
- 1 tbsp Chopped parsley
- 1 oz Lemon juice
- Salt and pepper to season
Instructions
Chicken meat preparation:
- Heat medium saucepan over medium heat add olive oil
- Toss chicken meat in oregano, paprika and garlic
- Add seasoned meat to saucepan, stir, once chicken meat appears cooked add chicken stock and cover
- Simmer for 5-6 minutes
- Remove from heat and keep warm
Tomato and cucumber salad:
- Combine all ingredients
To assemble:
- Place tortilla/pita on flat surface
- Cover ½ of the surface with Alouette Smoky Jalapeno
- Top unprepared half with rice pilaf and cooked chicken meat
- Garnish with diced cucumber and tomato salad, repeat for remaining tortillas/pita
